I chopped up a pineapple about a month ago, put it into a 1-litre jar, and covered it with 70 cl of rum. There was a 2-cm gap at the top of the jar and the pineapple was floating in the rum, so I topped up the jar with cheap pineapple "drink" and put the top on, with no airspace.

After a month I tasted it and it tastes... odd. OK, but odd. And there are air bubbles coming out of the pineapple chunks.

Is it possible for such a drink to go off? (I know, it was stupid to add the cheap pineapple drink.)

I'm considering diluting it with another 70 cl of normal rum, which will lighten the pineapple and the weird taste quite a bit.

Any other ideas?

(unfortunately I live in a country where you can't buy pineapple extract)

I think you're probably safe as long as there was nothing sticking out of the alcohol by the time you were done, I started something similar myself recently using vodka with raspberries and another with blackberries, and the raspberries are making bubbles in the vodka.

Did you add any sugar to this? If not, you might try adding a half tsp to a shot of the stuff and see what that does to the taste.

I bet yours makes a great Pina Colada! :)
 
Well don't forget it may be that it's some sort of "flavour smash" of something that's in the rum with the pineapple.......

Think along the lines of the German "rumtopf" except that's also usually got rum or brandy and sugar with the soft fruit.

Though soft fruit would normally go manky as quickly as pineapple it's both the sugar and the alcohol that preserve/"pickle" the fruit i.e. sugar is a preservative as well, but it can grow "visitors" on it's own, whereas alcohol normally kills off pretty much anything that might give you a dose of "the screamin' abb dabs".....

I'd suggest a little spice that lends itself to go with pineapple, either some allspice or some vanilla........
