I tried making a coffee cherry mead about 5 years ago and hated it. Fast forward to today and everyone is making it. Did the quality improve? What is your source for this?

For reference, the tea tasted like oxidized tobacco. I couldn’t see wasting honey on that.

It would be great to see any tips. I made a small batch of a cherry chocolate mead a few months ago, and didn’t get the balance right among the various ingredients. As I was tasting my samples to decide on how to adjust it, I realized it would be too easy for it to taste like cough syrup, so I didn’t pursue it.

I guess I come from a dumb family. I don't understand your statement friend. You started out talking about cherry/coffee. And then you state that the tea tasted like shit. ANd then you ask for a source. Where did the tea come from? What source are you hoping for? and are you just talking about a cherry mead with coffee in the profile?

You have to use tart cherries. Otherwise, it will taste like cough meds. Tarts won't. You can a little dark cherries in secondary if you would like without problems. I also like to add cranberries on the back side

To be clear, coffee cherry is the wrapping that is around the coffee bean. I am suggesting that perhaps my source (which was a coffee shop I forgot from 5 years ago) had really shitty coffee cherry tea.

I’ve noticed a lot of folks trying to use this and I’m curious if I’m sane or they are crazy.
