I just racked my 5 gal Bavarian hefeweizen last week, and there's still about 1/2" of sediment at the bottom. Should I rack this out during bottling, or should I suspend it and include during bottling? I understand hefeweizen are generally consumed with some amount of suspended lees.
 
Is the beer clear or still pretty cloudy? If it's clear you might want to stir it up.
 
I agree. Leave them behind. If it pours clear from the bottle (assuming you bottle), you can swirl the last 1/3 of the bottle and pour the yeast in. I've done that and it turns out nice.
