well the battle continues, heres the third version of my stout. i think this one might be closer, either way its goign into the new keg system.

Lumberjack Stout
1# Roasted Barley
1# Carafa
1# Flaked Barley
3# Pale 2-row
3.5# Muntons Light DME
1oz Northern Brewer(90 mins)
2 tsp. fermax
Irish Ale Yeast(wyeast activator smack pack)
S.G. 1.05

this is my first partial mash, and it was slightly disasterous ay first, but after a few messes it went fine, it took me a while to get it up to temurature. I mashed the grains at 148 in my handymasher for about an hour, them i sparged with a gallon @160. total yield was about 2 gallons. i did boil over but not to bad. after the boil i added cold water from freezer up to 5 gal and it was still at 90 so i gave it an ice bath, a few hours later it was cold enough and i pitched, added 2 tsp fermax, and then aerated with lees stirrer.

should i just use fermaid-k with beer too? i know DME and grain has enough nutrients anyways, but i tend to get slow fermentations with beer and i dont want any trouble.
 
well its already got some krausen going, i threw in a tsp fermaid-k and a tsp DAP just for good measure....now ill leave it alone for a week, i am going to rack this one into a secondary and leave it for 2 more weeks before kegging, hopefully to avoid any yeast flavors...
 
fermenting very fast, already down to 1.015.... its still chuggin along but very slowly. i think im still going to rack into the secondary for at least a week at the end of this week.
 
down to 1.013ish(i need a small scale hydro). racked it to sit a week or so before i keg it. almost a bi tof a brownish color to instead of the intended jet black, probably from the carafa? maybe just still some yeast in suspension....
 
wish it woudl have gone drier but oh well. does anythign but sugar contribute to gravity? maybe a pounds worth of flaked barley would add enough protein to do that?

well anywyas i kegged it with half a cup of corn sugar. ill prolly wait a while before drinking any of it.

side note: corny kegs are awesome. so easy and simple to use. i wish i would have made teh investment sooner. im deff gonna start getting more of them to age my meads in and expand my keg system to accomidate for another beer and mead as soon as i can afford it.
 
wow. this is great. its warm right now and i love it. i just tossed the keg into the frig so it should be cold by tonight and it will be amazing. i finally got that roasty flavor out of it. doing partial mash deff improved the flavor though.
 
well i know this sounds weird.... but..... the yeasty flavor is almost gone already. this doesnt make much sense as its only been like 9 days since kegging.... the alcohol flavor is getting a little stronger, again weird since it shouldnt be much higher than 5% based on beer tools calculator... i think its gotten better though so whatever i guess....
