I've found some pure maple syrup at a local discount-grocery-outlet type of place for $4.99 / quart.
I want to try to make a maple wine using just maple syrup, nutrient, water and yeast. When I searched the site, I found a couple posts where people mentioned experimenting with Maple Wines, but I didn't find any tangible information on the final product.
What kind of results have people had with these? Are they tasty or too overpowering? Should I try to finish it dry or would it work better sweeter?
I'm thinking about 1.75 gallons of syrup in a 5 gallon batch and then probably using D-47. If it doesn't go dry, that should at least get me inside of 1.010.
I'd appreciate any thoughts or suggestions on this venture.
