And, along with my stainless steel fermenter, I made a chiller jacket using 50 feet of copper tubing for the carboy. It is controlled by an STC 1000 digital controller, ice chest has 4 gallons of ice in water jugs, and 2 gallons of water circulating. There are two pumps that feed the water jacket and the immersion chiller.

JD - I'm having a hard time seeing how you can fit a steer into your "new stainless steer fermenter". As a former rancher myself, I'm sure you can understand the dilemma. I think you need a bigger pot than that or some other compression method that I'm just not thinking about at the moment. I bet it would be even better as a conical fermenter for mead. Just a thought and trying to be helpful.

Well there's certainly no way he's going to fit the bull I want then :-(

Hey would you ba able to take a picture of the very bottom? Is the valve offset to the side or directly protruding from the bottom? In the pictures it seems to be on the side of the cone.
 
I can describe it. The valve screws into a hole that is very close to the top of the cone. I'd say close to 80% the distance from the bottom point of the cone to the walls of the fermentor. The cone holds approximately 1 liter of liquid (slurry, ball bearings, or what have you) before it reaches the opening of the valve. Depending on how much yeast you have at the bottom, you can either just drain it while it's level or you can tip it a bit to get more of the liquid out without also getting much extra yeast. (Sorry, I'm not well set up for pictures. I'll leave that for someone else.)
 
Yes, the valve is about 4 or 5 inches from the bottom. Once you insert it and tighten the nut, turn it clockwise so the tube is pointing to the side or down. I usually put it to the side (quarter turn), that way sediment won't fill the tube. When you get ready to rack, twist tyhe valve assembly clockwise again so the tube it pointing up.

Hey newby to the site here - curious why you went with the bucket rather than the chronical fermenter? Either way, awesome purchase!
 
I wasn't concerned with having valves at the bottom for dumping trub, I don't brew beer, and the fermenters serve their purpose very well! They are easy to clean, and I am probably going to order a second one for a secondary to use as a first clearing vessel before transferring to a glass carboy.

I am also considering customizing a stainless steel 32 quart turkey deep fryer and making a fermenter out of it.

Really interesting. The turkey fryer solution would also make a great kettle for making fuel ethanol. I would use ptfe tape for the gasket.
