There is a store down the street that has peaches on sale for .68 cents a pound. It is kinda of a ghetto store so it does not have a weight scale. Based on the pre-packaged peaches (the ones I bought were loss) about 5 is a pound. So I bout 17 of them though found out one was rotten.

Primary
16 peaches
4lbs of sugar
1 gallon of water
K1v yeast

Secondary
Maybe another 6-8 peaches
2-3 tablespoons of Vanilla Extract

For primary i cut up all the peaches and made a puree with my hand blender. Mixed in with water and sugar in my bucket for easy access. I frapped it a bit to get a lot of air in then put it all in a carboy restarted the yeast per instructions then pitched in. My strip read 78 degrees for the carboy turns out that was just the water it was sitting in. After I took it out the temp went up. I was afraid I had killed my yeast. Little did I know....

Unlike last time with my strawberry mel I was NOT about to be cleaning up a giant mess, so I setup a blow off tube with a jar with vodka water mix. I put it in the mead cabinet and forgot about it till the next day when I decided to see if it had started bubbling. Oh it start all right. It started so well that it FILLED the blow off tube and over ran it. Keep in mind this was a 16oz jar. I emptied the jar put more vodka water in it and listen to it blurp almost 2x per second for the first couple of days. It has slowed down enough now to get an airlock on it.

Did you take a gravity reading? just curious where you started... Are you going to blend this with a traditional or just leave it as a nice peach wine?

Definitely curious as to how this turns out for you. Keep us updated if you can;D
 
Oops, I knew I forgot something gravity was quite high. It was like 1.32-5. I am going to leave it as a peach wine. I will update when it goes into secondary.

So I racked this. Gravity was 1.40. K1V does not mess around. It has a strong alcohol bite with little peach taste but lots of peach smell. I imagine the peach will return with some age on it.

One thing though, I should have left this in the bucket or not blended the peaches. MAJOR racking losses. I will be lucky to get 3 bottles out of it.

I also added the vanilla in the form of some extract. I just poured it in so I estimate maybe a tablespoon. I will let it settle for a bit then sample to see if it needs more vanilla.

Side note: I broke another hydrometer. Fuuuuuuuuuuuuuuuuu
 
I'm going out tomorrow to get some fresh orchard picked peaches -- Loring. This is the peach that Jaemor Farms in Ga. uses to make their Peach wine. It is supposed to be sweeter, since none of the orange-brown rind stuff from the seeds sticks to the peaches... Can't wait for this one... Ribs and wings in the works also....

Do tell more. That sounds like a worthwhile trip. I'm slightly south of Atlanta.
 
It's on Gainesville highway 23 about 20 miles maybe North. Would be a trip for you, but if you're trekking to/from the Mountains, stop there.... The Loring Peaches are beautiful, biggest I have ever seen, about the size of a baseball..... They have about 300 acres of Orchards.

This fall I'll go up to Ellijay to R&J Apple Orchards and get some fresh apples for Hard Cider.!!
 
I have sorbated and sulfited this one. Just waiting for it to clear up. I really need to get a hydro meter.

This is a great thing to do with less-than-perfect peaches, especially if they have dark red skins

I like it. It has a strong alcohol bite right now and the peach flavor is still coming out. The vanilla must have been in the lees because I taste almost none. I think next time I will add a bottle of extract when I make a proper mead out of this.

I bottled my Peach Melomel today, and it came out very clear. Racked a total of 3 times, I think. Tastes fabulous, almost like a peach brandy. I followed Schramm's recipe used those Loring peaches, and it came out great. Letting it age for 8 months...
 
The plan is for this one to age 1 year. I might try a small bottle around month 8 just to see how she is coming along.
