My great grandfather use to make and tought me how to make wine/rum mead well thats his name I use Port as its to my likeing over wine

Ive a old oak cask just over 2 gallons add 1 pound honey to 1/2 gallon rum [OP is better] then fill with port and a table spoon of yeast seal then turn daily for 6 to 8 weeks bottle then drink the next year a potent brew That Ive found a lot of those Ive meet over the years liked well when they can stand again any way most do not feel the kick hehe

Just a ? if any one else knew of this drink

That sounds like one potent beverage, and I can imagine it would leave you feeling like you've been plundered. :)

I don't know if you need to add the yeast though. This isn't a beverage that is fermenting. If you take 1/2 gallon of rum at 90 proof (45% ABV) and mix it with 1.5 gallons of port with and ABV of 17%, the resulting mixture will have an ABV of around 24%. At that level the yeast will not ferment and will simply die of alcohol poisoning. However, the yeast may be essential as a flavoring element, so it may be necessary for the recipe even if it is not doing any fermentation.

It is really cool to have a family recipe that has been handed down like that. I hope my great grand kids might make one of my recipes. In fact I hope they might inherit a few bottles of my Meaderia along with the recipe.

Yes it is and well I use 120% proof abv 67 % Rum and the port is 22% so yes a very potent brew if you are no used to it and yes the yeast and honey are premixed left to brew then the rum and port are added so yes it is more than just flavour but allso adds to the flavour
 
This is very cool! I think I'd like to make it once my barrel goes neutral. I've had a few guys tell me about "grandma's famous homemade wine" or "grandpa's peach brandy" in hopes that I could help them figure out the recipe (which was taken to the grave in most cases), but I think the guys were also looking for an excuse to talk to me. :rolleyes:

If you are interested Ill send you a detailed recipe its not that hard but the starting mix is well made more by feel and tast but well it works and if you like a sweet brew with a ABV of about 58% that is very smooth to drink then well a great brew but you need to learn to have smaller drinks hehe a great night cap

It happened twice before I realized the guys were just enjoying my attention and didn't really care as much as I did about making wine at home.

Your most welcome and well its a drink I like may be not to the voluem of my late teens and 20s but well at 58 Ive slowed down some so even with gifts I only make one batch a year now but my 19 year old has the likeing so look like it will carry on even if he still gets dad to do the work HEHE kid well he works full time so Im retired and have the time
