I'm experimenting with hops I haven't used yet. For now I've made two single-hop pale ales with the same recipe other than the hop switch. The goal was to make the IBUs roughly equal as well.

Simcoe/Amarillo Pale Ale

3 lbs domestic 2-row
1/2 lb victory
1/4 lb crystal 80
1 lb dry light extract

1/4 oz Simcoe or 1/2 oz Amarillo 60 mins
1/2 oz Simcoe or 1/4 oz Amarillo 15 mins
1/4 oz Simcoe or Amarillo flameout

Mashed at 152 F. OG about 1.046. IBUs should be about 40.

Final bottled yield was about 2.5 gallons each.

The Simcoe batch is already carb'd. It's fine. The Amarillo batch is in bottles and should be ready to go in a couple of days. So far not totally enamored with either of these hops. Perhaps I'll try one of the Cs next.
 
I think they are better when used together, rather than individually. If your are willing to try something other than citrusy, americian hops, pacific gem is interesting. It has more of a berry flavor.
 
I would agree with BBBF on the the combo usage. There is a pale ale recipe called Lakewalk floating around on the big beer forum. It is Simcoe, Amarillo and Centennial that is quite good, and Im not even a hop head!

I have not used either Simcoe or Amarillo alone, but I have made some very good IPA's using them together, with other hops. You might consider Citra as a single hop- I have used it in two SMaSH(single malt, single hops) beers with very good results, including a BOS last week in the ET Barnette competition for an American pale ale using Maris Otter and Citra. How does Simcoe taste alone? Looking at your recipes above, you might consider using more late/dry hop additions to get the hop flavor/aroma that those hops can deliver.

Seconding the Citra on it's own. It's a great hop.
 
I've only had one comerical example with Citra. I like it, but I think I would get sick of it fast. I get a strong Trix/Fruit Loops cereal flavor from it. Supposedly, people perceive this hop very differently. Some people get fruity and others get cat pee. I also don't get cat pee from Cluster, so maybe that is related.
 
The Simcoe tastes...interesting. I'll have to sit down with a bottle maybe this weekend and do it justice. I did bring a few to the last brew club meeting. They were really warm by the time we opened them, so there was a dank kind of flavor from the Simcoe. It wasn't awful or anything, but it was not all that "fresh" either.

I have heard a lot of folks will use these two in combo, perhaps I should have gone that route. Ah well. Given how the Amarillo smelled during bottling, I can see how they would go well together.

Pacific Gem is on my list to try, as is Citra. I am sensitive to the cat pee aroma though, so that makes me a little leery. I've tended to stay away from the citrusy hops in the past, thus I'm embarking on some trial runs. There was a tasting yesterday with Founder's and their Centennial IPA was pretty good; that's on my list now too. :)
 
I have used Amarillo as an aroma hop in a Rye pale ale that I made with very good results, but I have only used it as an aroma hop.
