Hello, newb here. I made my 4th batch today (been lurking for a bit learning). It's doing something I did not see in the previous 3, and I wanted to double check.

Recipe (I apologize, it's a little all over the place. I'm still getting recipe making down)

Strawberry Melomel Attempt 1

Total: ~ 3.3 Gallons.

Honey - 11.7 lbs (generic chef store honey)
Yeast: D47 - 2 packets.
Go Ferm - 12.5 g dissolved in 1 cup water
Frozen strawberries (thawed in 2 cups of water) - walmart brand. Cheese Cloth.
Strawberry juice from thawed strawberries - 2 3/4 cups.
Hot Black Tea - 1 cup
21 cups dear park spring water.

Original Target OG: 1.124 -> Ended up being 1.138 (after adding additional water to lower the SG)
Ph: 4.0
Target SG: 1.015

When I put the D47 in the water it was about 101.2ish, I missed the mark a little. But, it all seemed to bloom quickly, especially when I added two different 63 mL's of must to it to get it ready to go.

At the 6 hour mark I was going to aerate before going to bed, and I found these pics below. It does smell like my other 3 batches. All equipment was sanitized with Star San for a minimum of 120 seconds. Bucket is homemade, and was thoroughly sanitized.

Thank you in advance for the help!

Looks like a great experiment! I'd just make sure to punch down the fruit, degas at least once a day, and give it time. In homebrew parlance, it's time to Relax, Don't Worry, Have a Homebrew!
