You've done all the hard work already getting it into the bottles. Let it ride and see what happens. If it still sucks next year, perhaps you can pitch it.
and like that it's shot. Popped a corked bottle last night, completely flat. The crowned bottles have some carbonation though...So will grab another corked bottle and if it's flat, I'll prolly dump the bulk of them.
Do you have an urgent need for the bottles/space? Otherwise I'd just do something to warm them up and give them another couple months to see if they carb up personally.
they were held at 75 for almost 2 months, and roused once a week. The crowned bottles show carbonation (though not right for the style) but the one corked didn't have any at all.
I'm gonna grab another 2 at random and see if they're flat too, if they are, then I have no hope for them.
My 10-12% abv imperial stouts took 4-6 months to get even marginally carbonated. Full carbonation took about 8 months. I'd leave those things alone until fall and try again.
