I was planning on aging for a couple of months over flavor elements originally... So going "bulk aging" wouldn't really be an issue.

When in bottles, would you stand them up, or lay them in their side?

This is from a few posts ago, but...

Bottles are laid on their sides in order to keep the cork moist and therefore a good vapourproof seal.
If you're not using corks, it wont matter. If you're not storing for years, it wont matter.
Years old sediment tens to stick to the glass a bit, so it shouldn't matter if on their sides for a long duration. For short durations, I'd suggest maybe standing up for sediment would be better.
